Cave to Co-op and Farm Focus are both monthly highlights of local or regional cheese makers. Every month we participate in a specialty program to offer a variety of cheeses on sale to help shed more light on our wonderful selection of cheese artisans.

Local cheese makers Stan Biasini and Debora Wickar from Mt. Mansfield Creamery create a variety of cow’s milk cheese. Combining their love of skiing and their skill as cheese artisans, Stan and Debora produce a range of soft to semi-soft cheeses named after their favorite ski trails. Enjoy this month’s Cave to Co-op cheese, Chin Clip, a raw cow’s milk cheese and aged over 60 days. Rotated regularly and washed with beer or wine pressing gives Chin Clip it’s thin rind layer. Find this buttery cheese in the Upper Valley Food Co-op’s cheese case during the month of March!

Tomme like, Cows’ Milk Cheese

Try this month’s Farm Focus cheese from Woodcock Farm. These local producers create both cow and sheep milk cheeses surrounded by the Green Mountains in Weston Vermont.  The Farm Focus highlight is their tomme like cheese Jersey Girl. Pair this cheese with Les Trois Petits Cochons’ Saucisson  Sec or enjoy it on it’s own.
